Recipe

1. Turn on the flame and place a pressure cooker in sauté mode and let it heat. Add oil and whole spices. Sauté for 30 seconds.
2. When the cumin seeds change colour, add onions, ginger and garlic. Sauté for about 5 minutes until the onions become golden brown while stirring frequently.
3. Add tomato puree and spices. Stir and saute for 2 minutes.
4. Add the Archita Shudhi Soya Chunks (soaked in water and dried) and green peas. Sauté for about 3 minutes.
5. Add 1.5 cups of water and stir well. Deglaze the pot by scraping to make sure nothing is stuck to the bottom of the pot. Close the lid with a vent in the sealing position.
6. Change the instant pot setting to manual or pressure cook mode at high pressure for 3 mins. After the instant pot beeps, quickly release the pressure manually.
7. Open the pot. Garnish with coriander leaves and enjoy Soya Curry with roti, naan or rice.
