Crispy Lotus Stem (Kamal Kakdi) Recipe

Ingredients:

  • Lotus stem (Kamal Kakdi), peeled and thinly sliced
  • Gram flour (besan)
  • Rice flour
  • Corn flour
  • Turmeric powder
  • Red chili powder
  • Amchur (dry mango) powder
  • Garam masala powder
  • Salt to taste
  • Oil for frying
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Preparation of Lotus Stem:
    • Peel and thinly slice the lotus stem. Soak the slices in water to remove any bitterness. Pat dry with a kitchen towel.
  2. Making the Batter:
    • In a bowl, mix gram flour, rice flour, corn flour, turmeric powder, red chili powder, amchur powder, garam masala powder, and salt.
    • Gradually add water to make a smooth batter of medium consistency.
  3. Frying:
    • Heat oil in a pan over medium-high heat.
    • Dip lotus stem slices into the batter, ensuring they are evenly coated.
    • Carefully place the coated slices into the hot oil. Fry in batches until golden brown and crispy.
    • Remove with a slotted spoon and drain excess oil on paper towels.
  4. Serve:
    • Arrange the crispy lotus stem slices on a serving plate.
    • Garnish with chopped coriander leaves.
    • Serve hot with lemon wedges and your favorite chutney.
